Cuisine has taken different forms over time, incorporating new customs, products or fashions that mean we have moved on from stews to molecular gastronomy.
In a simple way, discover the different ingredients that have formed and continue to form part of the Mediterranean diet over the millennia. You will see how they have developed and how we can rediscover “archaeological” ingredients in order to incorporate them into our cooking, adapting them to how we eat nowadays.
In some cases we will use historical crockery and in others we will reinvent them.
